Check how your notes are processed

To check where speech becomes text, open Settings, then Transcription. On this Mac selects local transcription. Download its model before using it. This setting is about transcription, not every network connection.

Next, open Keys and Privacy. What Has Left This Mac shows recorded processing for the notes still in your archive. It's a useful place to review what happened to those notes.

You can also check the processing disclosure on the note itself. Vendor sync still uses a network, and optional cloud AI needs source permission. Check the setting and the note, rather than assuming every operation is local.
